SAMBAR (TAMILNADU STYLE)
Tamil Nadu sambar is a quintessential South Indian lentil-based stew, distinguished by its sharp tanginess and aromatic spice profile. Made primarily with Toor Dal (pigeon peas) cooked until creamy and mushy, providing a thick, protein-rich foundation. Its signature "kick" comes from a concentrated tamarind broth, which is more pronounced in Tamil Nadu style than in other regions. Flavoured with Sambar Podi—a complex, dry-roasted blend of coriander seeds, dried red chilies, fenugreek, and cumin.
