CHICKEN / MUTTON VARUVAL
Varuval is Village Style South Indian meat dry, a dish that prioritizes raw, earthy flavors and is often prepared in heavy iron woks (Kadai) over a wood-fire flame. This style of Varuval is defined by its deep, smoky aroma. A fiery blend of hand-ground dry red chilies, fennel seeds, and peppercorns creates a bold, lingering heat. A massive infusion of fresh curry leaves and small onions (shallots) provides an earthy sweetness that balances the spice. The meat is cooked until the juices are fully absorbed and the fat renders out, naturally darkening the masala into a rich, mahogany-brown crust.
